Smokin' BBQ Thread

huh...very interesting. looks good! (even the kimchee )
What's the beverage?

I just had the best Korean BBQ here- in Daejon, South Korea this evening:

First- they smoke the meat and get it ready in this wood fired smoker. Note the hardwood stacked up, and the Korean roof on the smoker:

Then, they bring it to your table, where you have a wood fired grill in the middle of the table. Throw it on the grill for some finishing, add some Kimchi and garlic, and you're there!

Awesome Jim..Hope you're having a good time..:)

All looks GOOD Jim, that is a BIG TIME SMOKER, makes mine look like a Mini!! Do they smoke the meat all cut up in small serving sizes or hams and butts etc. wouldn't take long to smoke small slices. Is that Oak, Hickory or some local wood they use for smoking, I bet it has a great flavor. Yesterday I used an Apple and Peach mix to smoke a Boston Butt and a Chicken YUMMY!!:D

James, I 'll be there in a couple of weeks!Vacation or work?I love my BBQ over there!!!!! Man, I ask for extra garlic every time.....I love to lettuce wrap my bulgogi and roasted garlic cloves!!!!You probably had Soju! The peppy Rice Wine of Korea! Be careful with that stuff!!

It's really a NICE DAY here in Georgia, 86 degrees today not a sign of rain, so it's BBQ Time!!
Marinated A 10 Lb Boston Butt and a Chicken, Threw a big old kielbasa on top of the roast, slow smoke, about 220 degrees using Red Oak which will add a really smoky flavor just like I like it.
Friends will be over about 4PM, PARTY TIME!!:laugh:

Here in Texas we use mesquite wood. I have a simple charbroil brand smoker I bought @ home depot, it works good. I'm using oak right now (I cut down a huge branch) I like to smoke using wood/charcoal for about 3 hours, then put in a large tin pan covered in foil (fat side up always of course) for another 11-12 hrs. Comes out great. oh yeah my marinade?

I like to soak it for about 12-18 hrs in "Alegro" brand "original flavor" sauce, we have it all over down here.

In love mesquite especially on Beef, it's the best on Steaks, I usually grill steaks on my gas grill but fill the smoke pan with mesquite, what a flavor. With pork about any wood will do, just depends what you like. Chicken is different I use Pecan or Peach to smoke Chickens not too strong but great smoked Flavor.
I have an upright charcoal Smoker made by Great Outdoors will hold about 10 pork Boston Butts plenty big enough for me. I like to cook them slow like you, really comes out tender.
I'm in the process of building a Pig Cooker, but's that's another story, nothing like a whole hog slow cooked! Damn I'm getting hungry! :D

Darn if it don't!
You-all must understand I have many adornments, signs, lights etc. to apply I think a thatched roof would do it. There is one thing I can tell you, IT WORKS. hic! Brisket was really good.:D

if you do use bus parts get two of them and take it off the left side of one and the right side of the other, after you park them together you'll have a doublewide and no one will be the wiser.

just don't pilfer the short bus, them kids deserve a fighting chance.
