Happy Thanksgiving to all and I hope by now you are all safely home from work. Some of you are dealing with inclement weather.
Here the weather is great, sunny and low 80s. The commute home was not so great. Freeway and street closures all over the place due to accidents. Spin outs, roll overs, t-bones and at least two deaths. You would think it was due to a Noreaster or something. But, no, just people beings dicks and in a hurry to get to wherever.
There is no time to prepare now (you couldn’t pay me enough to leave the house tonight) but I dreamed up a really good sounding t-day meal for singles, older people with no family, curmudgeons or just cheap charlies who want turkey.
Get a couple pounds of ground turkey, a box of prepared stuffing mix and a couple of eggs. If you really want to get fancy, some chopped celery. Mix it all together. Shape it as you wish, loaf or turkey looking. Bake it at 350-375 for a while. Until it is crispy brown on the outside. Allow to cool for a while and slice. Stuffed turkey! Make a side, open a can of cranberry sauce or not.
I have not had a chance to kitchen test this and as lean and dry as ground turkey can be the stuffing mix may require a little hydration. Maybe not, crunchy turkey loaf may be soothing. Eggs are for a binder and may be omitted if you got a thing against chicken embryos.
